I want to move.....

A big part of my life is gardening, I love growing flowers, herbs and vegetables. I love the springtime when the bulbs start to push through the ground and spread out. I love the color that the flowers introduce in the summer. But what I would love even more is to have it year round..... I love having four season it has it's advantages but for the most part I want a more temperate climate...How about San Diego or even St. George.... San Diego would be nice but so far away, St. George is closer and Janice is there. She's the one that rubbed it in the other day, planting herbs and watching some veggies come up and here we have SNOW SNOW SNOW!!!! April 1st and it's been snowing all day.... Trig's company is opening an office up in San Diego so maybe I will start considering it. St. George would work too...I don't think I would miss the snow. Could I really move? I don't know.....right now it's all talk. :0

So Cupcake....So Cute

Little Liza went to her first birthday party last Saturday for a little friend in the neighborhood. It just so happened to be at a cupcake bakery so mommy was in a happy place and so was Eliza. These girls were so cute and so sweet and had so much fun. They each got to decorate a cupcake, I of course helped Eliza pile the frosting on so that we could enjoy it later... Liza was too precious I didn't make her wait to eat it....She takes after her mommy, we love the pretty sweets!!! The bakery is called "So Cupcake"

King's Cleaning

I don't know why I have such a hard time picking up after myself and my kids, especially with a mother who was a very sweet and loving "clean freak." You know when you go over to a friends house unexpected and there house is amazingly in place and clean and collected? Well, my friends get stopped at the door. I poke my head out and say sorry but you can't come in, no lie. A year ago I could just say, "oh I have epstein bar, I have no energy to clean" but now no excuses!!! I have a serious issue with not putting things back in there places and so do my kids. SO, this is my plan. It's called "King Cleaning" I am going to pretend that at anytime someone very important is going to be stopping by and my house has always got to be clean no matter what.. As Trig would say "A place for everything and everything in it's place" It's not that difficult I know but it's just hard for me being raised by my mommy who did everything for me...that sweet little lady bless her heart!!! :) Yes I am 34 years old and still talk like this... and with that said I'm off to clean!!!!

Pork Tenderloin with Dijon Marsala Sauce

My friend Dusti found this recipe online and shared it with me. It is full of flavor and amazing with pork, chicken, vegetables etc. It is so savory I want to use it on everything. Dusti didn't have Marsala Wine so she used chicken broth and it was still yummy. Try it on pork first, you won't be disappointed.

Pork Tenderloin with Dijon Marsala Sauce

INGREDIENTS

  • 2 pork tenderloins
  • 4 tablespoons Dijon mustard
  • 1 tablespoon oil
  • 2 tablespoons butter
  • 2 shallots, minced
  • 1 cup Marsala wine
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Coat pork tenderloins generously with mustard. Oil a 9x13 inch baking dish.
  2. Heat oil in a large skillet over medium-high heat. Arrange tenderloins in pan, and brown the meat. Turn to brown evenly. Transfer meat to prepared baking dish.
  3. Bake in preheated oven for 20 minutes. Turn, and continue cooking for 20 minutes, or until desired doneness.
  4. Meanwhile, melt butter over medium heat in the same pan used to cook the pork. Cook shallots in butter until soft. Stir in Marsala, mustard, and cream, and cook until volume of liquid is reduced by half.
  5. Slice pork, and place on a serving dish. Spoon sauce over meat, and serve.
