Scallops with a White Wine Sauce

Scallops with a White Wine Sauce

This was so yummy, I just made it tonight. I served it over pasta and added about 1/2 C of heavy cream to the sauce to make it a little bit thicker and creamier.

  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 1/2 lemon, juiced
  • 1 tablespoon minced shallot
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 1 pound sea scallops
  • 1 tablespoon olive oil
  • salt and pepper to taste

  1. Preheat the oven broiler.
  2. In a skillet over medium heat, mix the chicken broth, wine, lemon juice, shallot, and garlic. Cook and stir until most of the liquid has been reduced. Stir in the butter until melted.
  3. Brush the scallops with olive oil, and season with salt and pepper. Arrange on a baking sheet.
  4. Broil the scallops in the preheated oven about 2 minutes on each side, or until opaque. Serve with the wine sauce.

St. George

After Zions we headed to St. George. The kids had so much fun in the pool and it was decent weather. We drove up beautiful Snow Canyon and did a little hike and watched the kids play with the bugs. We went to the golf course where they filmed High School Musical II so Ethan could see it, he was embarrassed to have his picture taken so I didn't post it.. So cute. It was nice to see everyone outdoors hiking, biking, walking, etc....I'm going to work on Trig and see if we can make it down there permanently. :-)

Zions National Park

One of my goals for this year is to spend time enjoying the great outdoors and visiting places that we have never been. We checked one trip off our list...Zions. I was a bit disappointed with the weather. After the crappy weather we've been having in SLC we were all looking forward to Southern Utah, the sun and warmth. We had sunshine but it was chilly and quite windy. We stayed at The Best Western Zion Inn which was great, we went swimming and sat in the hot tub even though it was 32 degrees outside, the views were breathtaking so it made it all worth it. We had fun with our good friends Dusti and Steve and then my best friend from Price and her family met us and we hiked the narrows, well to the beginning of the narrows I guess. I would love to go back in August and actually hike the narrows without the kids, looked amazing.
